A cook reads a new recipe once and gets it right, which looks like a gift and is really an accumulation. It is the eleventh braise. The technique already lives in the hands; only the details are new.

Speed comes from having somewhere to hang the information. The first thing anybody learns in a field is slow and feels like proof of stupidity. The fourth is quick and feels like talent.

You are almost certainly fast at several things already and have stopped noticing, because fast feels like nothing at all from inside.
