It looks like ease. It is rehearsal — the same figure said out loud so many times that the flinch came out of it.

People for whom money comes easily are rarely luckier. They are practised at the two or three moments where a number has to be spoken, and they have stopped experiencing those moments as an imposition on the other person.

That part is learnable. Mostly it consists of saying the figure and then not filling the silence afterwards.
